Stir yeast and sugar into warm water until dissolved

Stir salt and 1 1/2 cups of flour into mixture. Cover and let sit for 30 minutes in a warm place.

Add remaining flour to form a soft dough

Turn out onto a floured board and knead for a couple of minutes, adding flour as needed

Shape into two loaves and place on baking sheet

Brush tops with warm water and sprinkle with sesame or poppy seeds

Let rise for 30 minutes

Bake in a 425F oven until golden (about 30 minutes)
